Mike's Chicken -N- Dressing

Ingredients:
10lbs. leg quarters
5 large onions
1 large skillet of corn bread
1 can - cream of chicken soup
1 can - cream of celery soup
1 lg. can chicken broth
2 cup cooked rice
salt and pepper to taste
Directions
for preparation:
Boil
chicken in enough water to cover leg quarters. De-bone cooked
chicken and set aside. To chicken juice, add broth, onions,
soup, salt, and pepper. Cook until onions are tender. Remove
from heat and add corn bread. Mash corn bread with potato
masher. Add rice, and cooked chicken, and stir well. Pour into
large baking container and bake at 300 degrees until golden
brown. (Note- Melted butter poured on top of dressing before
baking helps to make a more even crust). Feeds about 15 to 20
people. Great for Church lunches.
